Merry Green January

Just add this simple Shaved Cauliflower and Red Cabbage Salad salad and you've got a beautiful and delicious dish to present. This vegan salad is rich in glucosinolates, phytochemicals known to assist in regulating our body’s detoxification enzymes and protect against cancer - good for that new year resolution detox ;)

Shaved Cauliflower and Red Cabbage Salad [makes 6 servings]
½ head cauliflower (about ¾ pound), tough leaves removed
½ head red cabbage (about 1 pounds), cored
6 inner stalks celery with leaves
½ cup flat leaf parsley, roughly chopped
½ cup (2 ounces) raw walnuts, roughly chopped
2 teaspoons Dijon mustard
juice and zest of 1 lemon
¼ cup olive oil
Using a food processor fitted with a slicing disk (or a handheld mandoline), shave
cauliflower, cabbage, and celery. Transfer to a large serving bowl and gently toss with
parsley and walnuts. Set aside.
To prepare dressing, in a small mixing bowl, whisk together mustard with lemon zest and
lemon juice. Gradually whisk in olive oil until well combined. Pour over tossed salad
immediately prior to serving. Enjoy!
