What are you guys up to for Memorial Day? I think it's totally picnic o'clock. And what makes a picnic happier than pretty party plates and cups! I've been brainstorming picnic ideas, and a quick orzo pasta salad is easy to pack and serve. The one above is a simple mix of roasted beets, tomatoes, avocados, cucumber, feta, lemon juice, dill, and olive oil. Feel free to mix in whatever you want! Mix in your faves, but beware... beets turn the orzo pink! Have a great long weekend!
