Vegan Eggnog Time of Year

To me, it's Christmas time as soon as I see eggnog on the shelves. I can’t get enough of the stuff! But a drink made from sugar, cream, and eggs is not the healthiest choice. So I came up with this vegan version I can feel good about drinking all holiday season.

Vegan Egg Nog (serves 6)
2 cups cashews, soaked overnight with a pinch of salt 
4 cups water
1/4 cup maple syrup
1/2 vanilla bean scraped (or 1/4 tsp vanilla extract)
1 cinnamon stick
1/8 tsp ground nutmeg
Cooking time: 30 minutes

Soak cashews in lightly salted water overnight.  Rinse cashews thoroughly and blend with water until smooth. Pour through a mesh strainer or cheese cloth.  Pour the cashew milk into a medium sauce pan and add syrup, vanilla, cinnamon, and nutmeg.  Bring to a low boil. Once boiling, reduce heat to simmer, stirring continuously for abut 20 minutes or until thickened.  Pour the “egg nog” through the mesh strainer or cheese cloth one more time and serve hot or refrigerate and serve cold.
